A classic dessert from
顺德 (Shunde), Guangdong — the name comes from the two layers of skin that form during the double-steaming process: one when the hot milk cools, then a second when egg-white-enriched milk is re-steamed. Served hot or cold, often topped with red beans, lotus seeds, or fruit. Shunde's Renxin Restaurant (
仁信) is the most famous original brand.
