Three kinds of pork offal, usually liver and intestine with stomach or kidney, sliced, quick-fried and tossed in a glossy thickened sauce with vegetables such as cucumber and carrot. Savoury and tender. A northern dish.
Quick-fried trio needs high heat: once the liver turns tough, it is no good.
Tips
usage
熘 is quick-frying followed by a toss in thickened sauce, and menus often write it 溜. 三样 just means "three things", so the trio can vary from kitchen to kitchen.
