Noodles of bracken fern root starch, dark brown to almost black, sold dried. Boiled soft and rinsed in cold water, they turn slippery and springy, and are usually dressed cold with vinegar, garlic and chili.
Thickened with bracken starch, the sauce turns thick and glossy.
Tips
usage
蕨根粉 names both the starch washed out of bracken fern roots and the dark noodles made from it. On menus it means the noodles, as in the cold dish 酸辣蕨根粉. The young fronds of the same fern are eaten as 蕨菜.
