热干面 is one of Wuhan's 'Five Famous Snacks' (
武汉五大名小吃). The noodles are pre-cooked, oiled and aired, then briefly reheated and tossed with thick sesame paste (
芝麻酱), soy sauce, chili oil and pickled radish — eaten standing on the street, not sitting in a restaurant.
