西湖龙井 - flat, jade-green, pan-fired in a wok by hand - is the prestige Chinese green tea. The name comes from a well 龙井 ('Dragon Well') in the hills west of Hangzhou's West Lake. Pre-Qingming (明前) leaves picked before April 5 are the priciest grade; the Qing emperor Qianlong famously personally favored eighteen tea bushes in front of Hugong Temple, still designated 御茶 'imperial tea.'
