Tips

usage
泡发 is the first step for most dried ingredients in Chinese cooking: 木耳 (wood ear), 香菇 (shiitake), 粉丝 (glass noodles), 竹荪 (bamboo fungus) and 海参 (sea cucumber). Cold water is slow but keeps the texture; warm water is faster. Sea cucumber can take several days.
