Meanings

  1. 1 beef omasum
  2. 2 "book tripe" (the third stomach of a cow, served in hot pot and Cantonese dim sum)

About the ingredient

肉类 Meat

The thin, leaf-like folds of a cow's third stomach, layered like the pages of a book, sold dark brown or bleached white. It is cooked very briefly to stay crunchy: a few seconds in hot pot, or blanched and dressed with chili oil.

Tips

memory
百叶 literally means 'hundred leaves' - the omasum's interior is lined with hundreds of thin folds that look exactly like the pages of a book. Dipped in boiling hot-pot broth for 5-10 seconds, it turns crunchy-springy. Distinct from 毛肚 (hairy tripe / rumen) and 牛肚 (tripe in general).
