A cow's stomachs, sold cleaned as separate parts that look and cook differently. Thick, plain tripe is braised in spiced liquid or stewed until soft; the thin, leafy part is dipped briefly in hot pot.
Beef tripe is crunchy and chewy, and no hot pot meal is complete without it.

肚 is read dǔ when it means an animal's stomach cooked as food: 牛肚, 猪肚. The belly itself, of a person or an animal, is 肚, as in 肚子.
usage
Hot pot menus name the parts of a cow's stomach separately: 毛肚 has a shaggy lining, 金钱肚 is honeycomb tripe, and 牛百叶 has thin, leaf-like folds. All of them are 牛肚.
