有嚼劲 (yǒu jiáojìn, 'has chewiness') is high praise in Chinese food culture, especially for noodles, dumpling skins, jerky, and 麻薯 (máshǔ, mochi). It's the rough equivalent of Italian 'al dente' but extends well beyond pasta.
mistakes
嚼 has two readings: jiáo (everyday chewing) and jué (formal/literary, as in 咀嚼 jǔjué 'to ruminate'). For 嚼劲 always say jiáo.
