Created in 1930s Chengdu by the husband-and-wife team Guo Chaohua (
郭朝华) and his wife, who hawked spiced offal slices on the street.
肺 (lung) is actually a misnomer — the name was originally
废片 (scrap slices) for the cheap offal cuts used;
肺 was substituted for euphony.
