乳扇 is a Bai (
白族) dairy specialty from Dali, Yunnan — sheets of fresh cow or goat milk coagulated with acid whey, then stretched and folded onto bamboo racks in a fan shape (hence
扇 'fan'). Counted among Yunnan's 'eighteen oddities' (
云南十八怪: '
牛奶做成片片卖' — 'milk is sold in sheets'). Grilled with rose jam is the iconic preparation.
