Tips
culture
焢肉饭 (kòngròufàn) is a staple Taiwanese rice bowl: a thick slab of soy-and-rock-sugar–braised pork belly over white rice, often with pickled greens. The mainland equivalent dish is 红烧肉 (hóngshāoròu).
register
焢 (kòng) reflects the Taiwanese Hokkien verb khòng (to braise low and slow); the same word is sometimes written 控 or 爌 in menus.
