抓饭 = Uyghur polo: rice slow-cooked with lamb, julienned carrots, onions and cumin in a heavy pot. The name literally means 'grab rice' - traditionally eaten by hand at weddings and funerals. A staple of Xinjiang weddings, where guests can be served thousands of plates in a day.
