抓饭 = Uyghur polo (پولۇ): rice slow-cooked with lamb, julienned carrots, onions and cumin in a heavy pot. The name literally means 'grab rice' — traditionally eaten by hand at weddings and funerals. A staple of Xinjiang weddings, where guests can be served thousands of plates in a day.
