Taiwanese 鸡排 was popularized by 豪大大 (Hot-Star) chicken cutlets in the 1990s — a butterflied, pounded-flat chicken breast, battered and fried larger than the paper bag it comes in. Mainland night-market 大鸡排 directly descends from it.
