Zhong Dumplings
Chengdu snack institution founded in 1893 by Zhong Shaobai 钟少白 at the Xiedaojie stall, now a state-recognized 中华老字号 (time-honored brand). Unlike northern 饺子, Zhong dumplings have a single pork filling — no vegetables — and are served in a puddle of sweetened soy and house-made chili oil, often with a drizzle of garlic paste. Textbook example of Chengdu 小吃 street-snack culture.
