色拉 (sèlā) is a phonetic transliteration of English 'salad', so 色拉酱 ≈ 'salad-sauce'. The synonym 沙拉酱 (shālājiàng) is also widespread — 色拉 is more common in Shanghai/Taiwan usage, 沙拉 elsewhere. Both are interchangeable.
