Kidney as food, such as pig's kidney: light red, glossy and springy when fresh. The skin and the white, strong-smelling core are cut away, then it is scored and flash-fried, blanched for cold dishes, or cooked in congee.
Once a pig's kidney is cut open, the white membrane in the middle has to be removed.

usage
腰子 is the everyday word for kidney, on the plate or in the body; 肾 and 肾脏 are the formal words. Pig's kidney is 猪腰, and scored kidney slices are 腰花, as in the Shandong stir-fry 爆炒腰花.
