罗宋 "Luosong" is an old Chinese transliteration of "Russian" (from "Russian" → roshen → 罗宋). Borscht came to China with White Russian émigrés who fled to Shanghai and Harbin after 1917; the Shanghai version drops beetroot for tomato paste and adds beef and potato, creating a distinct local classic.
