A soft green herb with a strong, sweet smell like aniseed or clove. Chaoshan cooks stir-fry it with snails and small mussels, it tops Taiwanese three-cup chicken, and Western cooks make it into pesto.
When you make a tomato salad, a little fresh basil makes it more fragrant.
