Thin, reddish-brown soy sauce brewed from soybeans and wheat, the everyday soy sauce of Chinese kitchens. Saltier and lighter in colour than dark soy, it seasons stir-fries, cold dishes and dipping sauces.
Pair with 老抽 (dark soy): 生抽 is saltier and lighter, used for taste; 老抽 is thicker, sweeter, and used for red-braising color. Northern recipes often just say 酱油 and mean 生抽.
