甜酱 is the everyday name for 甜面酱 — a dark, slightly sweet fermented wheat-and-soy paste. It is the defining condiment for 北京烤鸭 and 炸酱面 in the north. Don't confuse it with 豆瓣酱 (spicy broad-bean paste) or 酱油 (soy sauce).
