云腿 is short for 云南火腿, with the 宣威火腿 (Xuanwei ham) from northeast Yunnan as its most famous form. Together with 金华火腿 (Jinhua ham, Zhejiang) and 如皋火腿 (Rugao ham, Jiangsu) it makes up China's trio of classic dry-cured hams.
