Phonetic loan from English 'salmon' via Cantonese (saam1 man4 jyu4). Mainland menus may also write 大马哈鱼 (Pacific salmon, native species), but in restaurants 三文鱼 almost always means the imported Atlantic farmed fish, usually served raw.
