usage
Also called 酒酿 (jiǔniàng) in Jiangnan and 江米酒 (jiāngmǐjiǔ) elsewhere. Glutinous rice is steamed, cooled, mixed with 酒曲 (wine yeast) and fermented for a few days. Mildly alcoholic, sweet, used in desserts, soups and postpartum confinement food.
