蒙 is read Měng here, as in 蒙古 (Mongolia), not méng 'to cover'. The word ends in 餐 'meal', like 中餐 (Chinese food) and 西餐 (Western food), while most regional cuisine names end in 菜.
culture
In 内蒙古 (Inner Mongolia) the food centres on lamb and dairy: 手把肉 (boiled mutton on the bone, eaten by hand), 烤全羊 (whole roast lamb), salty milk tea and 奶豆腐 (pressed milk curd).
