稻荷 (Dàohè) is the Chinese reading of Japanese Inari (稲荷) — the Shinto fox deity. Folklore says foxes love fried tofu, hence 'Inari sushi' for the tofu-pouch version. The Chinese name keeps the kanji rather than transliterating.
