手冲 (from Japanese 'ハンドドリップ' culture) became the mark of a serious 'third wave' Chinese café through the 2010s. Shops in Shanghai, Kunming and Chengdu compete on single-origin beans and brewing ratios. Contrasts with 意式 (espresso-based) drinks.
mistakes
Beware: 手冲 also has slang meaning — in some contexts it's used as an euphemism for masturbation. In a coffee context the meaning is unambiguous, but be aware if you see the word out of context online.
