Sister dish to the famous 宫保鸡丁 (Kung Pao chicken). The dish is named after Ding Baozhen (丁宝桢), a late-Qing governor of Sichuan whose honorary title was 太子少保 — 宫保 — and who reportedly loved this stir-fry. 爆 here means quick high-heat frying.
