Pressed tofu cut into hair-thin shreds and simmered in rich chicken broth, topped with shredded chicken, ham and shrimp. Soft, light and savoury. A Yangzhou dish.
Zài Yángzhōu chī zǎochá, shǎobuliǎo yí fèn dàzhǔ gānsī.
A morning tea in Yangzhou isn't complete without a serving of simmered tofu shreds.
Tips
usage
The name means "big simmer": the shreds cook in plenty of broth. The other common Yangzhou way is 烫干丝, where the shreds are only scalded in hot water and dressed with soy sauce and ginger.
