history
卤煮 (full name 卤煮火烧) originated in Qing-era Beijing as a poor man's version of the imperial dish — when the expensive cuts of meat were substituted with offal, the dish became accessible street food. The broth is supposed to be kept going for years, with the old stock reinforcing the new.
