history
卤煮 (full name 卤煮火烧) originated in Qing-era Beijing as a poor man's version of the imperial dish 苏造肉. When the expensive cuts of meat were swapped for offal, the dish became accessible street food. The broth is kept going for years, with the old stock reinforcing the new.
