Very fine wheat noodles, as thin as hair, a traditional noodle of the north that is now an everyday food. The hand-pulled kind is a banquet dish and is sometimes deep-fried.
On the second day of the second lunar month ("Dragon Raises its Head"), northerners traditionally eat dragon-beard noodles.

A 拉面 (hand-pulled noodle) showpiece: the master folds and pulls the dough through many halvings - 128, 256, 512 strands - until each noodle is as thin as a human hair. Eaten on 二月二 (the 'Dragon Raises its Head' day) for luck, when its fine strands symbolize the dragon's whiskers. Also survives as a fried dessert (龙须酥).
