The three are
银鱼 (icefish, tiny and almost see-through, eaten whole),
白虾 (white shrimp, small and thin-shelled) and
白鱼 (a slim silver whitefish). All three are pale, hence the name, and all three are classic dishes of Suzhou and Wuxi on the lake's shore.
