炸肉 (zháròu): fried meat

炸 has two readings depending on the verb sense: zhá (2nd tone) = 'to deep-fry' (cooking), zhà (4th tone) = 'to explode'. In 炸肉 it's zhá - fried, not exploded meat. Compare 炸鸡 ('fried chicken'), 炸薯条 ('french fries').

mistakes

Be careful not to read this as zhàròu - that would suggest 'exploding meat'. The cooking sense of 炸 is always zhá.
