Tips

culture
A Cantonese or Chaozhou 卤水 is soy sauce, rock sugar and spices such as star anise. Kept going for years as a 老卤 'old stock', it gets richer every time meat is braised in it.
usage
As a coagulant it gives firm 北豆腐, while gypsum 石膏 gives soft 南豆腐. Hence the saying 卤水点豆腐,一物降一物 'bittern sets tofu: everything has something that masters it'.
