Tips

culture
The three are 鲥鱼 (Reeves shad), 刀鱼 (knife fish) and 河豚 (pufferfish). Knife fish is best before the Qingming festival, pufferfish comes with spring and the shad in early summer. Pufferfish is poisonous unless expertly prepared, hence the saying 拼死吃河豚, 'risk death to eat pufferfish'.
history
Wild stocks collapsed: the Reeves shad has been commercially extinct in the Yangtze since the 1990s, catching wild knife fish was banned in 2019, and a ten-year fishing ban on the whole river began in 2021. What restaurants serve under the name today is farmed.
