陕西) specialty — thick, dense, dinner-plate-sized flatbread with a crisp crust and chewy interior. Legend ties it to Tang-dynasty soldiers who baked dough inside their helmets (
盔) over a
锅 fire, hence the name. Often sliced open and stuffed with
腊汁肉 to make
肉夹馍-style sandwiches.
