From Huajiang town on the Beipan River (北盘江) in Guan-ling county, Guizhou. The dish is braised with local chilies, huajiao and over twenty herbs, then eaten hot-pot style. Consumption of dog meat is culturally contentious in China today and officially discouraged in several cities.
