Small cubes of lamb, with bits of fat in between, grilled on skewers over charcoal and sprinkled with cumin, chili powder and salt. Ordered by the skewer, several at a time. Say 不要辣 for no chili.
Iconic Chinese street food of Uyghur/Xinjiang origin, now found everywhere at 烧烤摊 (BBQ stalls). Usually brushed with cumin (孜然), chili powder (辣椒粉), and salt. In Beijing dialect pronounced 'chuanr' with erhua, which became the namesake for the whole grilled-skewer genre 串儿.
