Tips

culture
Long called the 'queen of mushrooms' (菌中皇后), 竹荪 grows wild in southern bamboo groves and was a Qing imperial tribute. Its lacy white veil makes it instantly recognizable; in cooking it brings a delicate texture rather than a strong flavor, perfect for clear chicken or duck soup.
