Mixed cow offal, such as stomach, intestines, lungs, heart and liver, cleaned and cooked together. It is simmered for hours until tender, best known in the Cantonese stew with white radish, and also served on noodles.
杂 ('mixed') is the standard food-name suffix for assorted offal: 牛杂 = mixed beef offal (tripe, lung, liver, intestine, tendon). The Cantonese street version 萝卜牛杂 simmers it with daikon and star anise - sold by weight, eaten with toothpicks from a paper bowl.
