杂 (zá, 'mixed') is the standard food-name suffix for assorted offal:
牛杂 = mixed beef offal (tripe, lung, liver, intestine, tendon). The Cantonese street version
萝卜牛杂 simmers it with daikon and star anise — sold by weight, eaten with toothpicks from a paper bowl.
