Paper-thin white sheets of lean pork pounded with starch, a Fuzhou specialty sold fresh or dried. Dried sheets are dampened to soften, cut into squares, folded around pork filling and cooked in soup.
Fuzhou's rouyan is made with hand-pounded yanpi wrappers.

A Fuzhou (福州) specialty. Lean pork is beaten with sweet-potato starch into a translucent sheet that wraps pork filling to make 肉燕 (rouyan), a soup dumpling eaten at weddings and New Year for its homophone with 宴 'banquet'.
