In the noodle shops of 苏州 and 上海 the noodles come plain in broth and the topping is the choice: 爆鱼 (fried fish in sweet soy sauce), 焖肉 (braised pork belly), 虾仁 (shelled shrimp). Ask for it 过桥 and it comes on a side plate.

浇 is "to pour over": the topping is ladled onto the noodles with its sauce.
