A Taiwanese specialty from Tamsui (
淡水). Eggs are repeatedly braised in soy sauce and spices then air-dried over 7+ days, leaving them dark, shrunken, and extremely chewy. Invented by Mrs. A-Po (
阿婆) when overcooked noodle-stall eggs turned out surprisingly delicious.
