Pressed from rapeseed (菜籽 = vegetable seed, specifically 油菜 oilseed rape). The dominant cooking oil across western China — Sichuan and Guizhou cuisine in particular use it raw-pressed (生菜油) for its grassy, slightly bitter punch.
