About the ingredient

The everyday name for 豆腐乳. Small cubes of tofu are fermented and then aged in brine or rice wine, which makes them soft, salty and pungent. The red kind is colored with red yeast rice; the white kind is plain. A little goes with congee or rice, or is stirred into sauces.
