The water-soluble sodium salt of saccharin - roughly 300 times sweeter than sugar. In Chinese food regulation it's one of the earliest regulated synthetic sweeteners; labels list it as 糖精钠 (saccharin sodium) under 甜味剂 (sweeteners).
