牡 is a literary prefix meaning "male (animal)" — 牡鹿 (stag), 牡牛 (bull), 牡羊 (ram), 牡马 (stallion). Its female counterpart is 牝 (pìn): 牝鹿 (doe), 牝马 (mare). Both 牡 and 牝 are bookish — modern Chinese more often uses 公 (male) and 母 (female).
